Summary

This study investigated the effect of rice type and cooking methods on the quality of cooked rice for refrigerated home meal replacement (HMR) products. Baek-jinju rice showed excellent moisture content, color, and texture retention during storage, while superheated steaming increased reducing sugar content and provided a softer texture.
