Summary

This study aimed to understand the sensory characteristics of commercial functional beverages and analyze the drivers of liking and disliking among Korean consumers. Sensory evaluation revealed that attributes like brightness, yellow color, Nurungji flavor, roasted flavor, and milky texture positively influenced liking, while astringent texture, bitter taste, and viscosity had negative effects.
