Summary

This study investigated the physicochemical characteristics of Superjami, which has a high C3G content, by comparing it with common rice (Ilpum) and black rice (Heougjinju, Suwon 415). Superjami showed a higher DPPH radical scavenging ability than Heougjinju, demonstrating strong antioxidant activity.
