Summary

This study investigated the degradation of histamine and tyramine by Bacillus species isolated from fermented soybean food and examined the presence of genes encoding decarboxylases and amine oxidase. The results showed that the selected Bacillus strains were able to significantly degrade histamine and tyramine, with substantial amine oxidase gene expression, indicating their potential as starter cultures for controlling biogenic amine accumulation in food.
