Summary

This study investigated the antioxidant activity and quality characteristics of steamed roll added with Ligularia fischeri powder. The sugar content increased and the moisture content decreased with increasing amounts of Ligularia fischeri powder, and the 0.5% addition group received the highest scores for appearance, texture, and moisture, while the 1% addition group showed good results in color, flavor, and overall acceptability.
