Summary

This study analyzed the changing sugar contents according to the strains of Agaricus bisporus and cultivation temperature using HPLC. All strains showed high total amino acid content at 19℃, and strain 103 had the lowest total amino acids compared to others. Cysteine content was the highest, followed by phenylalanine, glutamic acid, lysine, proline, and histidine.
