Summary

This study evaluated the quality characteristics of four rice cultivars (Hangaru, Seolgaeng, Dasan-1, and Anda) to select suitable varieties for rice beer production. The results indicated that soft rice varieties Hangaru and Seolgaeng were more favorable for beer processing and produced beer with lower bitterness compared to Dasan-1 and Anda.
