Summary

This study analyzed the effects of general and social characteristics of solo-diners on their restaurant service quality evaluation. Survey results classified restaurant service attributes into 12 attractive attributes, 7 must-be attributes, 1 one-dimensional attribute, and 17 indifferent attributes using the Kano model. The study confirmed differences in restaurant service quality according to the characteristics of solo-diners, which can contribute to establishing practical marketing strategies for their satisfaction.
