Summary

This study analyzed the genetic correlations among meat quality traits (moisture content, fat content, etc.), fatty acid composition, and sensory traits in Duroc pigs. Heritability estimates ranged from 0.17 to 0.63 for each trait, and a genetic correlation of -0.60 was observed between moisture content and fat content. Overall acceptability showed a positive correlation with water holding capacity and a negative correlation with shear force.
