Summary

Novel α-glucans with a higher number of α-1,6 linkages (L-IMOs) were synthesized using Thermoanaerobacter thermocopriae-derived transglucosidase (TtTG) to decrease susceptibility to hydrolysis and improve slow digestion properties. L-IMOs exhibited slow hydrolysis to glucose compared to commercial IMOs, and significantly decreased the post-prandial glycemic response in male mice (p < 0.05).
